Food!
I cannot believe with all the cooking and baking around here that I don’t have more posts on my food page. I have been making tons of things in January. Mostly stand bys, but also trying some new things too. I got so busy sewing, subbing, and being sick in December that I really felt like I left out some part of our Holiday experience by not baking more. I think I’ve been making up for it the past couple of weeks though. You can check out the sewSpun food page here. I will actually be adding to it more, starting now.
Here are just some of the things we have had in the past week.
Roasted veggies, of course they are so easy and yummy that we’ve probably had them 3 times this last week.
Cranberry tart. I made the first one 2 weeks ago, so last week when I made another one I just went ahead and made 2 batches of the cranberry yumminess and froze one.
This morning I whipped up some coconut butter. Yum! The recipe is from here.
Here is my coconut after I toasted it in the oven.
Here it is whir whir whirring in the blender.
All mixed up and ready to eat! I actually just ate a little bit by itself. Then I spread some on a lemon bread that I made last night.
Also last night I made a homemade pasta sauce with tomatoes, garlic, fresh basil, carrots, mushrooms, zucchini, and some other spices. It turned out pretty yummy, tonight we had it with spaghetti and meatballs. I also made extra of this sauce so I could have some to stick in the freezer. Sometimes you just need to be able to grab something homemade and yummy, but without all the dishes. What have you been making lately? -mandy

Yum! I made a homemade Mexican hot chocolate last month, with coconut milk whipped cream. (It was just the fat from a can of coconut milk whipped with powdered sugar, but it was tasty!)
